The chef

Juanlu Parra
Born in Linares, in Jaén province, his family moved to Alicante's La Terreta neighborhood when he was 14. He trained in cooking and pastry at Le Cordon Bleu in Madrid, then spent close to a decade with the Dani García Group in Marbella, working up from line cook to their R&D department — a stretch that included the group's third Michelin star and openings from New York to Bangkok. By his own account, he didn't actually know how to cook Alicante-style rice when he started there, so he toured the city's best rice restaurants to learn before putting rice on his own menu. He opened Koiné with his partner María García in May 2022 — she runs the front of house and is also the painter behind the artwork on the walls.
